Recently, i've been doing something akin to egg salad. What it do is scramble lots of eggs at once in a pot, until they're quite cooked and developed solid curds, and stir around until it's nice and chunky, and then add whatever else; sometimes mayo and yellow mustard, sometimes sour cream and dijon; onion and garlic powder, dried chives, salt and pepper. It's not quite like the normal egg salad, but so much less effort - i hate boiling and peeling and cutting many eggs at a time. This is faster, easier, and still pretty good.

A year ago I wasn't able to eat even one egg without a stomachache and horrible gas. So for anyone reading this thread who has issues with eggs, try taking a zinc supplement daily with an occasional copper supplement once a week or so. You don't want to take zinc daily for longer than 1 month or so, I did one month taking zinc every day, then one month no zinc. Then one month again with zinc, and so on. I also take digestive enzymes now and then to help digest meals but I'm not very strict on that and sometimes skip it.
I can now eat one fried egg per meal without my digestion going haywire

I'll tell you a story though --

Me and the other cook at waffle house used to get bored and see how high we could get the eggs in the air while flipping them in the pan. By the end of the shift we were almost touching the ceiling tiles. You had to catch the egg while moving the pan downward to sort of absorb some of the energy or the egg would just plop and splatter oil on your arms.

Next shift I was doing it again to show off to the waitress and didn't move the pan fast enough and it landed hard and shot out yolk onto a customer eating at the counter. He called me a fucking retard and his wife had to calm him down.
