I've never made chimichangas before. What's the best way to cook them at home? Deep fried? Shallow fried? Oven baked?

Get them to room temp using a microwave then finish them off on a hot skillet and move them too soon or they might tear.

Make a burrito like you normally would (ensure ingredients like meat are precooked)
Fold it tight
Preheat oil in pan
2 - 3 minutes on one side (or until golden brown)
flip
2 - 3 minutes on the other side
Remove
Let cool
Eat

Toss in a pinch of flour when preheating oil to test it. When it sizzles, the oil is ready. I use enough oil to shallow fry them.
