I just moved out from my parents house. What are some "must know" recipes for amateur cooks? What's one recipe *you* know that's easy to make and delicious?

Also general recipes thread. I'm gonna dump some pics I saved over the years from 4chan.

I don't think there's anything everyone must know
you should know to make what you like to eat
you eat a lot of bread? learn how to make bread
you like fish? learn to fish and to cook fish
you like pizza? make your own pizzas
the only advice I could give you here is to do the same thing over and over until you master it before moving to the next one

Roasted chicken thighs and vegetables is one of the lowest effort delicious dinners. You peel and chunk pretty much any vegetables you like into ~1 inch pieces and dump them on a tray with the chicken. Drizzle oil over everything, salt, pepper at minimum, paprika and garlic powder is good, toss everything together and roast for an hour at Gas 6 / 500F. After dishing up you can add a splash of water to the tray and scrape the bits to make a bit of sauce. Leftovers will keep in the fridge for a few days.
If you have anything like chilli jam, curry paste, salsa or barbecue sauce, adding a few spoons of one of them in when you're tossing the ingredients will add variety.

Plain old scrambled eggs. But you have to do it right and it can take some practice. Whip three eggs until they're blended and add salt. Pan on medium low heat. Once it's heated put in some oil or cooking spray. Put in the eggs and a tablespoon of butter. Cook, stirring constantly until the there's no liquid egg left but the eggs are still wet. Serve with black pepper and chopped scallions. If you brown the eggs or allow them to get dry or rubbery then you did it wrong.

Pasta aglio olio peperoncino

It's the ultimate midnight meal (especially if you have people over)
Usually I use spaghetti but use the shape that you prefer

Put the pasta in a pot with boiling salted water
While the pasta cooks heat some olive oil (the good shit) in a large skillet
Add some garlic in the skillet (in small pieces or just whole as you prefer) and some chili flakes or fresh chili peppers.
DONT BURN THE GARLIC IT TASTES LIKE SHIT IF BURNED
To be sure just heat the garlic for like 1 minute (gentle flame) then turn off the stove and let the olive oil do the work
When the pasta is almost cooked, like 2 min before the timing wrote on the package, turn on the flame of the skillet and then put the pasta in there.
Add a couple of teaspoons of the pasta water (dont throw it all away!) in the skillet and stir. The pasta water help the oil to stick onto the pasta, like glue.
Serve & enjoy

It's delicious, tasty and all the ingredients last a long time in the shelf. If you are feeling fancy you can add some frozen chopped parsley in the end just before serving.

Cheers from Italy

that channel will answer your question for easy, good recipes better than 100 of these threads. his strange lilt will become soothing to you.

if I had to give just a single recipe, I would say spanish tortillas (with potato and onion). I'm not sure how inexperienced you are with cooking, but if assuming you are very inexperienced:

1) learn to cook chicken breast in a pan on the stovetop. the goal is consistently juicy, tender and nicely seared on both sides. salt and pepper. once you can do this in your sleep, the number of simple dishes you can make expands a thousandfold: chicken sandos, chicken with salads, pastas with chicken, meal prep chix, broccoli and rice, etc, etc
2) pastas. they might be memey now, but a good starting place is to learn how to the basic pasta with pan sauce recipes: aglio e olio, cacio e pepe, alfredo, carbonara. these are very simple and take just a little technique. they're very good and I think you incidentally learn some good lessons along the way: e.g. making emulsifications (and how to fix/adjust them), controlling heat, trusting your intuition, value of simplicity, etc.
3) roasted vegetables. a little oil and salt.

putting these three together, you end up with many, many tasty recipes. chicken alfredo among them. chicks dig chicken alfredo.

bonus) learn to make good pizza dough, an easy sauce, and buy a perforated pan or stone. pizza is very low effort for a reasonably good result, and having the option is good for when you have to make stuff for other people. variation is mostly just putting different shit on top.

Season some chicken pieces (salt, pepper). Sear them with little oik until a little brown. Take them out.
Fry some diced onion until translucent in that chicken fat, add a little oil if needed. About 3 to 4 minutes.
Add minced garlic, move all that stuff around. Add salt, pepper etc
Put the chicken pieces back. Add some beer, some water (like 50/50).
Let that simmer for like 25 minutes. Ten minutes before taking it out you could add some peas or carrots, stuff that doesnt take long to cook (no potatoes).

You can eat that with some vegetables or white rice. You can have dozens of variations on that recipe too. Shit saves my life when I didnt know how to cook and first moved alone.

Stir fry food saves the day every time. It's really fast and easy to make. You can even make that in a regular pan, no wok needed (a big one is more confortable) and also with induction cooker. Not traditional but not bad at all.
Pic related is stir fry noodles with fish. My favorite over meat or chicken stir fry. Also, fish cooks really fast so its less likely to fuck it up. Will post recipe later. Have a video, but its all in spanish. Also you can use any fish you want, not necesarilly bonito, and be ok with just onions and tomato.

You live alone? You’re gonna want stuff oriented around that. Here’s one idea:

Buy a rotisserie chicken. Eat a leg/thigh with rice or potatoes and a vegetable. Chill the breasts. Slice one breast up for sandwiches. Dice the other breast for chicken salad. Both will keep for days in the fridge.

You can shred the leftover thigh and leg and wing meat and use it to make tacos.
