Dredged in a seasoned mix of cornflour and plain flour, allowing the salt to leech out moisture and hydrate the coating then dredged a second time and into the hot oil it goes. Fried until golden then removed, drained and finished in the oven, served with wedged lemon, bitter greens and thick-cut chips.

If we go the butter-fried route, we dredge it in flour, cook it with laurels and black pepper and finish with parsley as well as lemon juice and zest, serving it with polenta. Is good.
