It’s a weird muted cheese flavor, think cheddar frozen, melted down then reformed. It also has the consistency of a crumbly statedler eraser, but overall it’s pretty good for free cheese. >add sodium citrate to pan (idk 1/2 tsp), whisking to dissolve
>add cheese to water
>whisk to melt and dissolve
>thicken to desired consistency
that's it. that's american processed cheese. you can use other base cheeses if you want, including very nice expensive ones. I make a small batch once a month or two to go on broccoli or in a burrito -- I add brined jalapenos if the latter.

I had this in 1992 when I played Jack Tripper in my 3nd apartment,(me and 2 women.)
One of them was pregnant and got the WIC box delivered weekly I think. Peanut butter, Gov't Cheese, and a few other items like vitamins and powdered milk.
