bought some canned salmon, never had it before
what's the best way to use this?
I was thinking of making a glaze and searing it a bit in a pan and putting it on top of rice with some sesame and green onions
is that the right direction for a can of salmon?

unless it's super fresh, canned salmon takes on such a metallic flavor that it basically tastes exactly like canned tuna a lot of the time.

It's good protein and omega 3, but there's not much you can do with it except mix it with mayo and do a sandwich, put it on crackers, or maybe add some bread crumbs and make salmon cakes

If you have a good potato and egg salad recipe make that and add the canned salmon. I've even bought supermarket potato & egg salad and added salmon to that and it was pretty good. Btw be advised when you take the salmon out of the can it'll be like staring into the face of Azathoth, but it tastes fine. You can remove the bones and skin if you like but you don't have to. The bones are soft enough to eat.

fpbp mentioned canned salmon in stews, so it doesn't actually sound that bad, desu. It does seem interesting to use salmon in a southern dish where salmon historically wasn't used.

The size can in ops pic usually has bones and skin in it. If you get the tuna can sized ones or the mylar packets of salmon it usually doesn't but is more expensive.

Make fish cakes.
Cook some potato and mash it up, add some spring onion, garlic, parsley, salmon, salt, pepper, curry powder, a raw egg. Then stir it all up and make cakes, then roll in breadcrumbs and fry in butter and/or oil. Have with a salad and a squeeze of lemon juice.

Used to have salmon cakes made with this a lot as a kid, always with a side of golden hominy. It's somewhat of a comfort meal for me.
