Fingerlings. Boiling water 5 mins, cut in half and toss with olive oil, salt, pepper, smashed garlic, and rosemary. Spread on a baking sheet cut side down and pop them into a 425 degree oven for 10 mins, flip and do another 8 mins. Most amazing roasted potatoes.

Agria potatoes
>Scrub off dirt
>Quarter potatoes
>Add to pot with salt and water
>Bring to a boil and boil for 8 minutes
>Drain and chill
>Preheat oven to 220C
>Add a glug of olive oil and a generous slice of butter to roasting pan
>Preheat
>Add potatoes face down and cook for 15 - 20 minutes
>Turn to other flat side and another 15 - 20
>Turn skin side down and another 15 - 20
>Season with salt and pepper
>Eat
