I have a rosemary shrub that is huge and way more rosemary than I could ever use normally, and I don’t want it all to go to waste, does anyone have any interesting ideas on what I can do with rosemary?

Just leave it to grow, it's a lovely plant in itself, and provides good nectar for bees.
It will always be there when you need a sprig for cooking.
The plant in your pic isn't huge at all, it can easily get 10 times larger.

Make Rosmarinkartoffeln. a german dish that you can use as side or main.
>cut potatoes into pieces (use young potatoes with clean an thin skin, keep skin)
>put them into a bowl, press some garlic over them. put the rosmary leaves over it (a good amount)
>season with a bit of salt and pepper
> pour some olive oil over it
>mix and let it sit for about 10min, then mix it again and let it sit again for 10min
>throw them into the oven at about 180°C for 40min
enjoy.
to have it as main eat the potatoes with Kräuterquark (herbal quark https://en.wikipedia.org/wiki/Quark_(dairy_product) )
it's easy food, yet tasteful

It's not going to die when the snow comes, so don't worry about it going to waste

The heartier woodier stems can double as a skewer for some grilled chunks of tender chicken breast, thigh or filet mignon. Poke a metal skewer first if the stalks are flimsy or weaker.

I like rosemary focaccia bread, so fast to make, rise and bake. Dip in some warmed olive oil with lots of sea salt and pepper. Easy perfection. All those dimples hold some oil when you bake your dough too. Add some sun-dried tomatoes or oil cured olives to change up the flavors. Rosemary can get repetitive.

I meal I do a lot is:

Onions
Peppers
Olive Oil
Cubed Chicken
Chicken Broth
Rosemary
Butternut Squash

Basically make a fricassee with the ingredients, browning the onions and butternut squash. Let it caramelize and then reduce it all with the chicken and broth.

Really good. You'll get a good sauce, I'd eat it over pasta or rice or on its own. Really easy. Really good. You can use quite a lot of rosemary and it seems to bind with oil or fat you use and doesn't get overpowering.

While Rosmarinkartoffeln made the traditional way are great, since I made the "Roast Potatoes" recipe by Kenji lopez alt (back when he actually made foodlab stuff), I don't think I can go back. They are a bit more effort admittedly, but they are so much better it's unreal: https://www.seriouseats.com/the-best-roast-potatoes-ever-recipe (recipe is a bit down on the site). Still potatoes with rosemary and garlic, but far more crispy. Sometimes when I don't have the time I still make normal Rosmarinkartoffeln or Bratkartoffeln, but Kenjis version is really worth the additional effort.

might be the apex of goot ofenkartoffeln, but after all, i just throw young potatoes with seasoning in the oven. some are better, some are less.

He didn't say he couldn't sell it, he said it was illegal to label it as "organic" without a lengthy process you obnoxious libertarian. A 100% free market means we end up with a country like China where all the cooking oil is cut with sewage, the noodles are cut with heroin to make sure you keep buying, and everything has been proven free from any contamination despite killing all your livestock in less than 6 months then making all the town sick.
