Had this a lot growing up. Very cheap dish to make and we were poor.
Boiled eggs and potatoes with a basic white sauce with homemade mustard and diced bacon.
"Skidne æg" which translates as shitty/dirty eggs (because of the mustard sauce)

Potato's, like many other things, used to be more nutritious and have more of their own 'flavor' and much more nutrition before industrialization and intense commerciality breeding. There is a reason Europes population fucking exploded when they were brought back across the sea.

We would usually have that with onion sauce. Just a basic white sauce but you fry some onions in the fat before making the roux.
Also, no egg should ever be boiled for more than eggxactly six minutes.

Picrel is mashed potatoes with fried bacon and onions. You have a glass of milk with it, even if you don't usually drink milk.
