Except for this. Fresh seafood is always market price because it's fresh, and Hawaii is (or at least used to be) the only place in the US where you could order fresh seafood that was caught that morning and never frozen at a restaurant. That said, this menu is fucking depressing.

That's not the point. Commercial kitchens can't legally sell shit that was caught that morning unless it was put on ice or cooked entirely through. Hawaii is the only place that is exempt from this, where you can actually eat fresh fish in a restaurant/you didn't catch and prepare yourself.
