Hell yes that's where the natural umami flavor is. If you fry up some shrimp in just oil and salt the innards are what give it that extra savoryness. Picrel also love lobster and crab head meat, very similar taste.

Really easy, take all the heads and shells and add them to a pot and brown then for a min or two. Then Just add like a cup or 2 of water for every oz of shrimp you had and then reduce, strain it to finish

You can add spices like Pic but I rarely do since I'm using it as a base stock for other things
