I'm going to cook this motherfucker for the first time in my life (rib eyed steak) and I don't want to fuck it up. What is the best recipe to cook it and what's the best side you recommend? I heard you need full iron pan which I have and you need some fat (for example bacon you cooked before) to cook on it. If I don't have bacon will olive oil be sufficient? What are the best spices? I really don't want to fuck this up please help me /ck/

salt and pepper and butter is best, dry it and salt it and leave it sit in fridge over night

put it in oven at 200 or lowest temp for 20-30 mins, take it out and pat it dry once again and then on a blazing hot pan with a high temp oil or lard for a minute a side (or til preferred doneness)

put it on a cutting board let it rest on top of garlic and rosemary, slice some butter over it and freshly ground black pepper (if you put it before it will burn in the pan) while you let it rest in a tent, the butter will melt over the steak

Thanks anon, what sides do you recommend? Potatos? Also can you tell men a bit more about oven? Why do you put it in there before pan? Won't it cook in there in 20-30min on 200? Appreciate

at 200 F? It will not for that short of time, it will just heat the inside enough to keep it medium rare or rare depending on how short or long you keep it there, it's fool proof reverse sear method

i like roasted or grilled asparagus or just a salad

Preheat oven to 500 degrees, put cast iron pan in oven for about ten min, put into burner and sear steak about thirty to sixty sec per side, put steak in oven for two minutes per each inch thick it is and then rest it on the stovetop still in pan covered with foil for another two min. Rest on a plate and this should give you a perfect medium rare

Not OP but sounds like a good idea, thanks

If you can do it outside. salt and oil your steak, dont add pepper. Heat a cast iron griddle or pan until it is smoking hot. Add butter/oil/fat and place your steak on. There will be a fuckton of smoke. Cook until desired donness, maybe two minutes a side if you have it hot enough. Remove to rest for at least 10 minutes and add fresh cracked pepper and the juices/fat from cooking. Really it's just apply steak to hear, can't fuck it up.

Please don't do what >>17796504 says.
Your steak will turn into a charcoal brick if you do that

>> No.17796965

Don't overcook it, in terms of taste it's better to leave it a bit rare by mistake than overcooking it.

almost agree but if this is his first time he's better off getting an oven safe meat thermometer and going by temperature instead of time, aim for an interior temperature about 10 degrees lower than your desired doneness(115-120 F for medium rare). Everything else is fin though I would add a pad of butter, a garlic clove cut in half, and some herb like thyme or rosemary to the pan after flipping the steak once, then spoon the melted butter mix over the top of the steak while searing

also you don't have to let it rest if you use this method

Dont salt a steak and leave it over night like this retard says.

>preheat pan on medium heat for a few mins
>pat steak dry
>season with salt and pepper
>add your choice of oil/fat (I use EVOO for flavour)
>sear it for 2-3 minutes a side until desired doneness is achieved
wa la. You could add butter and some fresh herbs at the last 30 seconds and baste the herb butter onto the steak, but I don't.

Heston got you covered, anon

Guys, don't pepper your steak before your high-heat sear wtf. You're going to burn the pepper and get a bitter taste. Add it during rest
