I buy the rendered lard like pic related from Mexican grocery stores, you get a whole quart for like $3 and it lasts me a couple months of cooking. Everything I make is better, more filling, and I don't feel like crap after eating it like I did with vegetable oils. Mexicans seem to still prefer it so it's widely available and therefore cheaper. I think here in the US you can find freshly made lard in Mexican stores too at a decent price. But otherwise you can only find cheap hydrogenated lard with preservatives at a lot of stores and I don't think that's healthy, or it's sold as a premium product for like $1/oz which is expensive.

Lard fell out of favor in the US because of vegetable shortening/oils lasting longer and being cheaper. Seems like demand for it is going up again now though so it might eventually become cheaper for a better quality product.

The problem isn't the live bacteria, it's the toxins they produce. It's why you can't just cook a cut of rancid meat, killing all the bacteria, then eat it like normal. Even if you kill the bacteria they still had several hours to produce toxins and eventually the build up of toxins will become too much and you'll get sick. And actually warm food encased in lard sounds like prime breeding grounds for botulism.
