Non tasting menus demand a much higher skill from the kitchen. 5 people sitting down everyone orders a different combination rather than 5 of the same thing for a tasting menu.

With large tasting menus you often experience palate fatigue and lose track of where you are in the meal. 3 courses done to perfection lets you really enjoy each course fully instead of having 3-5 bites and moving on.

A 3 course 3 star meal sounds much more satisfying than a 20 course 3 star meal if I'm going to be honest.

This isn't saying tasting menus don't have their place.
