why is this shit so expensive? it costs as much as a steak at some places

Your image contains 3 different kinds of seafood, and paella also frequently contains some kind of land meat. It's also a rice dish, which means it takes at least 20 minutes to prepare. It also contains saffron, but people who think saffron is expensive are kind of dumb and you shouldn't listen to them.

A bit of a derail, but do they sell these where you live? Did you fall for the marketing?
I know I did, but I have no clue what to do with this pan you get. I always made my version of rice and meat in a pan with a lid

Yes, and they're often composed dishes that are cooked properly and well seasoned, and yet you somehow insist that they should cost the same as the hunk of salmon or bucket of mussels you're eating at home like a caveman as though everyone else's time and experience is worth as little as your own just because you have no taste.

Real saffron is expensive as that guy said.
Some of the cheap grounded saffron is cut with a similar flower, and most them uses all the pistil, which is 3/4 flowerless cut, only the vert first part of the pistil has flavour and should technically be used.
That why most of the saffron in powder taste like nothing

That happens for the majority of spices you buy already grounded, it is not a mistery and perfectly legal

>But muh saffron threads are really light so it's actually cheap by unit of flavor
Wrong. Just a half of a gram of it is 5 bucks. In the context of a paella being "overpriced" on a restaurant menu, the saffron alone could bring it from $10 to $20

That's a good point. I can cook steak at home. Paella, not so much. I tried it once in a cast iron pan and the rice glued itself to the bottom creating a thick burnt glue that I couldn't get off.
Now I have a nice carbon steel I may try it again, but I think it'll take a bit of practice.

>tried it once in a cast iron pan and the rice glued itself to the bottom creating a thick burnt glue that I couldn't get off.
the original paella has a "burnt" lower layer, but it is considered a good thing, not carbonised mind you just slightly roasted, it's considered the best part

>> No.17715792

Surely one factor is that it takes so fucking long to make and plate. You can't just quickly heat it up and serve it like most other dishes.
So the idea is you reduce the number of people who order it by raising the price.

>> No.17715805

>>17715342
Yeah that's what I was trying to create, but the cast iron was just too sticky to get that layer off. I ended up having to boil water in the pan to dissolve it.

>> No.17715810

>>17714277
Not really. If I'm at the grocery store shopping for a dish and it uses saffron vs fresh basil I don't really see any difference. It's going to cost about the same. I mean, the saffron is going to be a more expensive initial purchase, but you'll typically get 2-3 uses out of a jar.
