Slowly starting to get into coffee.
For the longest time it just tasted like I was licking burnt peanut shells. I'd drink it if it was free but more often like with the random free Monster cans on campus I'd just grab it and give it to a friend. But between Trader Joe's and a few local places I've found some good instant coffee, coldbrew, and coldbrew instant crystals that don't require as much sugar or milk to make it drinkable.
I've also learned that some dark roasts are as smooth as silk, like holy shit this one local frufru coffee brand is really fucking good.
On the flipside I also learned that "green coffee", while it has a similar taste and look to milked tea, makes me as crazy and wired as an energy drink does.

I buy off brand coffee in a 3 pound tin. My coffee machine makes a gallon at a time. Sunday morning I make a fresh pot and drink 1/3 - 1/2 of it hot. Monday I drink another third lukewarm. Tuesday I drink the rest and top off the old grounds with about 1/4 cup of fresh grounds, and make another pot which lasts me through Thursday. Friday I dump half the grounds and top it back off for another pot which lasts until it's time for a fresh one on Sunday.
In total it's around 3 gallons of coffee per week, but two of those are using half old grounds, so it's more like 2-ish gallons. I genuinely enjoy dirt cheap 3-day old coffee at room temperature almost as much as a hot fresh cup.

Dark Sumatra med/fine grind and tamped in my drip basket is the only thing I've drank for a couple years. Different brands, different results. For top and back-mounted handled pouring vessels, the hand on top is most definitely to provide stability. Most pouring vessels are only stable in two axes when held with one hand. You're asking me how I determine how I'm going to dial in a coffee? Subjective trial and error guided by taste. The learning curve you can't seem to get over. More water weight above the bed will give you a faster flowrate out of the bed. More water above the bed is more area for water to bypass the coffee completely. Faster brews with the same grind size are going to be lighter on your palate. Tweak to your liking. Keeping all your water IN the slurry is going to brew a stronger cup, partially due to less bypass, partially due to the water lingering in the slurry longer. I don't pull every espresso at 1:2,25-28 seconds,9 bar ,212f water either.
