My gf is vegan so I cook plant-based food all the time. My advice: stay away from processed meat substitutes. You can work with tofu and tempeh, but "plant-based crumbles" and shit like that are disgusting and not worth it.

I don't know how you make tortilla soup but there's plenty of protein in the black beans.
Sour grapes and low-effort shitposting aside, she actually was quite unhealthy before we started dating. She complained about being tired all the time for the 14th time so I sat her ass down and explained that she wasn't taking veganism seriously and she needed to start exercising and to get b- and d-vitamins, omega fatty acids, iron and zinc from somewhere. Pumpkin, nuts, garbanzo beans, eggs (which are still very cheap for the protein compared to normal meat), mushrooms, and peas are all high in protein and will leave you feeling full. Pumpkin pot pie is delicious, quiche is easy, stuffed mushrooms are better than meat some times, hummus is great warm or cool, and split pea soup is worth the effort. Also, eggplant parmigiana is arguably better than chicken parmigiana, in my opinion.
