recently my lunch goto is nachos using leftover ground beef and lettuce from tacos

corn chips
cheese
ground beef
sliced lettuce
avos/guac
sauce
olive oil
cracked pepper/salt

doesn't take long usually cause the lettuce is already washed and cut and the meat is already made

>can of mixed vegetables
>can of spicy V8
combine, bring to a boil, simmer until beans are tender, add mixed vegetables in the last 30 minutes
ground beef and barley make good additions

I like to bake pork chops fairy often, then toss a nice side in there like corn, greens, or a baked potato. Probably the healthiest meal I go for.
Lunch is a lot lighter, usually just a can of tuna right outta the can in some oil, or a can of soup.

Eggs with veggies:
Throw butter and frozen veggies (peas, carrots, corn, etc) in a pan.
Heat it through, throw in appropriate number of eggs and put the lid on.
Of course season both the veggies and eggs with some salt and pepper.
It requires only one pan and zero prep work.

I make a tomato bolognese that's half ground beef, half beans.
I serve on a sweet potato, with broccoli
That's 4 portions of vegetables in one meal.
Plus, after you've cooked the bolognese, it can all be done in the microwave. Reheat bolognese in microwave, microwave frozen broc, prod sweet potato with fork and microwave it.

I have this every week day. So easy after work. Big sloppa. What else can I add to it? I'd add onions but my supermarket doesn't sell frozen ones and I hate chopping onions, as I'd have to do it in bulk for this.

you just mix canned tuna with mayo and sriracha, then do the whole "lay down nori then put rice on that and then add your fillings then roll" schtick, cut it into slices and boom.

for the fillings i just like to use cucumber because it's dirt cheap but you can also add cream cheese or carrots
you can also skip the nori if it's too expensive in your area
