Because many people buy cheap ice creams. And cheap vanilla ice cream just tastes generically sweet, it has very little actual vanilla. A good quality vanilla ice cream is absolutely delicious.

Vanilla is seen as boring. Since it is not much less intesting artificial vanilla flavour. But it is also overused in many sweets and looks "plain" Withe, when you are lucky with black dots.
I enjoy vanila alot in a few thinks like pudding, cream or in tea. But in the main example of ice cream. The typical artifical vanilla ice cream is simply bland.
