depends on what you like. Miso paste/ssamjang goes really good with it, along with fish sauce, kimchi, sesame, minced garlic, and chives ofc.. though sometimes I'll make a sauce with orange juice, ginger, sesame, honey, and a little bit of chili paste and add leftover chicken and cabbage to it. Save the packets and add them to soups and stuff. If you want to burn yourself a second asshole, get gochujang and some chili oil and add a fuckton of garlic.

The hardest part is learning how to assemble and prep ingredients you haven't worked with. Pick a few that your store has and learn to prep them. On the egg, learn to marinate it. You can also poach frozen gyoza or add it fried. Making your own broth and even getting better quality noodles is also doable, and affordable.

Just make your own sauce. Once the noodles are close to done I remove the water and add a mixture of 2 tbs soy sauce, 1 tbs rice vinegar, 1 tbs honey, an egg, and anywhere from 1tsp to 1 tbs of chili garlic sauce depending on your taste. You can add the seasoning packet too if you want. Add some scallions too for some green.
