When you freeze fresh food, the cells get damaged from ice crystals forming and some get raptured. When you defrost meat, the intercellular fluids starts to ooze from the tissue, giving meat soggy texture.

Vac sealed meat can last for years. If i just wrap in plastic, like pic related, it gets freezer burnt faster. I use these cuts a lot faster, like withina a couple of months. Also when removing vac sealed meat from freezer into the fridge to defrost, it can be kept in the fridge for a couple of weeks before use. During this time the sealed meat goes through a wet ageing process.

yeah bro I hope you have an instant pot or something though. Growing up (on a dairy farm) my grandpappy would walk me and my siblings down to the creek every saturday night. Just before our parents would holler for us to come to bed, we'd all join arms and reach deep into the river. Whoever could pull up the most sediment would receive a treat in the form of old people candy (Werthers OG, Risen, etc). Anyways, spread some peanut butter on the frontside of a piece of bread, then put jam on the other. Soak in water for approximately 2 minutes just enough to soften up the bread just enough that you can start to bend/fold it. Slap that into your bag, salt to taste and suck the air out. I don't even own an Vac sealer, but you can just do it with your lips if you can purse your lips just right.
