it depends on the cayenne you get. I've got a little jar of "hot paprika" that's basically just good cayenne - it tastes like dried cayennes - somewhere between red pepper, poblano, and ripe jalapeno... ultimately, its purpose is to add heat.

Are you talking about the preground powder? Anything preground loses a lot of flavor. Try grinding your own dry peppers, or getting fresh cayenne peppers if you can. They do have flavor.

Yes, but only because of a really unfortunate accident. I got some of his nose in jar #7. He even signed it for me!

But for real and for true - technically there should be Hungarian peppers ground up in my jar labelled "Hot Paprika", but there aren't. It tastes like lightly smoke-dried cayennes, and it's priced like lightly smoke-dried cayennes. I grow a few plants that seem to favour purple fruit. Some of them wind up with some holes in them on the smoker after I'm done with a brisket or pork shoulder. This might as well be that, just a little lighter in colour. It's always better the fresher it is, and there's a shelf life. I just kind of feel bad that OP's only had expired cayenne.
