I grew up in Argentina in a Gaucho region where eating meat is 100% of what we do every day all the time.

No one here is a faggot about meat doneness and most people eat well done meat because it still remains juicy and it has a nice char on it.

Now some american "steak house" retard culture is seeping in and people are starting to whine if their meat is not bleeding.

I've spent some time in your nation and while your asados are incredible, they do tend to limit themselves a bit and let the chimichurri do too much of the work. Thankfully the meat is generally of such high quality that it doesn't matter. It's just one style though, and there's nothing wrong with preferring it. Do try out some more of the out-of-the-way BBQ available in the USA should you ever visit. And fuck eat grilled riñones, that's awful no matter what. The doneness of your steak depends on the fat content. A leaner piece of meat can (and should) be rarer. You want to brown the outside while rendering the fat on the inside (more fat needs more time to render), and minimizing loss of juice. When you cook a steak to well done, you denature the proteins more than necessary, and end up hemorrhaging juice. Just look at picrel. Plus, the crust ends up burned instead of browned.
