What I look for in my hot sauce is a little extra. Smokey flavours, a nice tartness that isn't just bottom shelf white vinegar, stuff that adds complexity.
I usually just host the various dinners in my family and they get me obscure hot sauces that are interesting in turn. I then use them until they're used up.
So I don't have a go-to, I just let people surprise me and work with what I get.

Chipotle Tabasco, made from the same tabasco peppers using identical process to original except peppers are smoked over pecan logs first which makes them milder and gives a smoky flavor
This is where the chipotle craze started btw, tabasco plantations paid central American workers partly in peppers and they were smoking them, someone finally got around to tasting them and realized they are amazing
I add a little chipotle tabasco to basically any kind of meat when I cook, always improves it
Also try Crystal, it's nearly as popular in SE Louisiana as Tabasco
Crystal is made from Cayenne peppers instead of tabasco which makes it cheaper, and it's a milder slightly more vinegary flavor

In Mexico chipotle is jalapeno, the technique was spread in the US from central American migrant workers who smoked Tabasco peppers on Tabasco corporate owned plantations as part of their salary
Paul Prudhomme was an early adopter and he was very influential and got other chefs to start using chipotle in recipes
It spread to big corporate food scientists from there and suddenly chipotle was the new flavor of the week
