Bbq is supposed to be simple. There is no elborate preparation, as the focus should be on the variety of meats, supplemented by sauce and sides. The brisket sandwich allows even delivery of sauce, bread, and meat in each bite. The humble brisket sandwich also does not encroach on the territory of other meats or sides. Sure, you could add more to the sandwich, but I think that would detract from the overall experience.

I regularly bake and eat plenty of fresh bread of all types. When you eat bbq, you have to have white bread. It’s the traditional way to eat the food, and it goes better with bbq than any rye, sourdough, focaccia, etc. ever could.

For me, it's Bacstaí, a traditional Irish dish. It's a potato pancake usually served with vegetables, meat or cheese-sometimes in a wrap form.

Lots of Irish traditional food is unsurprisingly based on hot, widely available food that's inexpensive to make. Brúitín goes with everything, it's essentially buttery mashed potatoes with scallions.
