Why do people use eggs in burgers? I don't mean a fried egg but when shaping the patties.

eggs are used as a binding agent, especially when the meat is prone to brittleness during cooking after the fat has melted into the skillet/coals.

I’ve had some good burgers in my time.

I love a good Swiss, melted Swiss cheese and mushrooms, roasted mushrooms, and caramelized onions on a burger.

That is hot stuff.

You can get that at a number of different places.
