Pulled the pork after resting, made some Mexican rice (from scratch minus the frozen vegetables), and some seasoned canned black beans (I like the canned ones). Topped the pork with some fresh chimichurri that I whipped up and served with lime. Pork was exceptionally juicy and tender with a really nice crisp on it. The fat cap provided a ton of moisture and flavor, and was even good on its own.

Sweet potato focaccia. The original recipe calls for regular potato, but I had extra from the rolls so I kinda just did an experiment. Was good, but pretty moist, basically no 'crumb'. But at the end of the day, taste is all that matters. Will probably try different focaccia recipes in the future, anyway.
