I'm from a small country where the cows are fed almost exclusively on grass, grass silage and shit like kale. The times I've tried imported corn fed beef it tasted horrible.

To be organic you need some autistic audit to go through your farm and make sure you never sprayed a weed and never treated the cattle for worms. Aussies do cattle a bit differently to us anon. A lot of it lives on huge outback stations and then brought in to finish on feed. They'd probably never finish properly out there, be too little cover on them. But would in some places, it's damn big country. They're also able to use hormones, a patch behind the ear which releases slowly, makes a steer have the same levels of hormones as a bull.

It's confusing when people point out gaminess or "shit taste" like it's new and I don't know what you're used to, but all whole/fresh meat always smells like shit from the animal it was taken from and this gets more true the closer to the bone you get. Roast chicken near the bone smells like a coop full of chicken crap. Beef smells like manure. Fish smells like fish shit under the generic familiar "fishy" smell the meat has that everyone focuses on. Once in a while I'll be having a steak dinner with someone and they comment on it tasting gamey, but to me it just tastes a slightly stronger version of normal.

Maybe my sense of smell is more sensitive or something, but if I try to explain this or point it out they think I'm crazy and don't notice it. The only time I see other people notice this is if it's stronger than usual for whatever reason. That seems to happen either when they eat the organs and liver especially, or if animal has been fed the diet it's supposed to eat and then they understand, if only for a moment. Humans are no exception; you are what you eat and whatever your diet is changes how you smell inside and out. Your tastebuds have merely had a glimpse of the truth of reality revealed to them is all.

Biggest mob that I reared so far was 180. Looking to do autumn born ones as well so will take them twice a year. Take them right though to finishing. I'm not making veal anon, I'm raising proper beef cattle, and doing the hard part of rearing them so they don't get killed at 4 days old. A lot of the big players which used to rear these calves and sell them weaned are retiring, where I live. And a lot of beef farmers can't be arsed with feeding calves.
