he's saying that youtube cooks tell you to rest your steaks for a ridiculously long time, "at least 10 minutes" is what they normally say. Utter insanity. I've seen another guy say you should wrap and rest a smoked brisket in a cooler for 6 to 10 hours. So much for that "Bark" they keep talking about.
