A bit of mise en place.

Toast 2-3 each of dried guajillo, ancho, and pasilla chilis. Blend them with 2.5 cups of unsalted beef broth

For the dry ingredients, mix together:
1tsp crushed red pepper
1tsp ground mustard
1tsp onion powder
2tsp cayenne powder
2tsp black pepper
4tsp cocoa powder
2Tbsp cumin
3Tbsp chili powder
3Tbsp paprika

Chop up some fresh peppers of your choice. I have 1 jalapeno, 1 serrano, 1 habanero. Chop up a red onion, and mince some garlic

Forgot to say to add the garlic before adding the beef.

Add in the dry spice mixture and let it bloom with the rendered beef fat for a minute, before mixing everything together

Then put a lid on it, and place it in a 275 degree oven for 90 minutes.

I forgot to take more pictures here. When you take it out of the oven, add in your 2 cans of unsalted beans (if you don't like them, don't add them, faggot). Add salt and taste for seasoning. I like to add some brown sugar and a splash of apple cider vinegar.

Now place it back in the oven without the lid for 30 more minutes

I cook the meat first before adding anything else so that when I drain the fat I don't lose any flavour/spices

otherwise the ingredients look good
