I'm not telling you to have it rare or even medium rare, but no one legitimately enjoys a thick-ass steak burnt to a crisp. You're left with tough dry indigestible mass. You may as well eat shredded up tires, the consistency and flavor is basically the same. If it needs sauce to taste good and not just basic seasonings you're ruined the meat. Sauce should enhance the taste, not salvage it.
