Ingredients:
Flour and butter for roux.
Half a liter of stock or whole milk
Four hard boiled eggs chopped into small pieces
One can of tuna
Peas and/or capers
Salt and pepper
Tartlets

1) Make the roux
2) Add the liquid
3) Once thickened add the eggs, tuna and peas/capers
4) Salt and pepper to taste (doesn't really need any if you go with stock and capers)
5) Serve in warmed tartlets

Pic related: Went with whole milk as my liquid and capers only. Fucked up and forgot to heat the tartlets but tasted great regardless.

>2 cups heavy cream
>5 egg yolks
>1/8th teaspoon salt
>1 teaspoon vanilla extract OR 1 vanilla bean
>1/2 cup sugar

1. Add heavy cream and salt into a saucepan. Add vanilla bean now (if using). Heat just until hot.
2. Add egg yolks to a bowl, beat with 1/2 cup sugar until smooth.
3. Add vanilla extract (if using) to cream now.
4. Temper the eggs by stirring ~1/4-1/3 of the hot cream into the egg mixture
5. Stir the tempered egg mixture back into the cream
6. Pour into 4 6oz ramekins placed in a deep baking dish
7. Fill dish with boiling water until water level reaches halfway up the ramekins
8. Place into preheated 325F oven for 30-40 minutes, or until just barely set.
9. Wait for it to cool, then place in the fridge overnight.
10. Add sugar on top (just whatever sticks to it naturally should be enough) and use a torch, broiler, spoon, etc. to caramelize the top.

Actually really hard to fuck up as long as you don't let the eggs curdle
