I was thinking of making a type of summer version of a mince pie. A large fruit pie and jam, maybe cinnamon?

I heard the Queen loves chocolate though

This actually supposed to be released to the public like coronation chicken was in 1953, so nothing too hard or extraordinary.

I just ate a traditional Welsh-style flummery (with oats rather than gelatin) I made, though I added chocolate and banana to it. She'd probably like that, I would guess.
I enjoy it cuz it's a lot like semolina puddings I grew up with.

The key to these things is you have to devise a recipe that is not very complicated or expensive to make for the average brit, with ingredients you could find at tesco some of which are exotic but not too exotic, and it has to reflect the forward moving nature of the UK ie. it's rich cultural diversity. Remember, coronation chicken has curry powder in it

I'm not a dessert or a desert master but I'm thinking a North African inspired dish would be the way to go, mint, dates, lemons, that sort of thing

She eats kind of bland/boring/repetitive. Her cooks over the years document her menus in several interview documentaries.
She did have about 3 drinks a day, with champagne and the same chocolate cake each evening, which she didn't always eat or finish but it was wrapped up for the next day, not wasted.

The mince pie flavors made into a pudding, is literally a steamed pudding with hard sauce or brandy butter, and seasonally, it'd be a wintry cold weather thing for being so heavy and rich. A "summer" pudding will have bread and lots of assorted fresh berries.

It's a loose pudding, with characteristics of tapioca, and a flavor note that perhaps reminds you of the sea mixed with the familiar scent of washing your whites.
