Getting laid off (twice now, because I live in a mega cucked city and got laid off again recently because someone on the team caught the sniffles, but unemployment is taking forever to process our shit) brought back my love for cooking as a hobby. I rarely cook (about twice a week) and when I do I try to make stuff that requires the least effort, especially in dirty dishes. I week ago I made a big pot of chili and feasted on it for three days with different sides, then I made a big pot of coconut chicken curry and feasted on it for three days. Tonight's dinner and tomorrow's reheat is a one pot pasta where I just throw farfalle, diced onion, diced garlic, sliced mushrooms, fresh spinach leaves, some cream, some vegetable stock and a bunch of seasoning and spices in a pot in somewhat of a civilized order and wait for it to hopefully taste good.

I eat what amounts to gruel almost every meal

For breakfast I make savory oatmeal. basically pour boiling water over rolled oats with quick saute stuff. Add enough water to keep it soupy. Some common variations:
Bacon, egg, kale, garlic, cheese and hot sauce
Polish: sliced kielbasa, egg, smoked paprika, sweated cabbage, carmelized onion.
Asian: Kale, egg, bamboo shoots, garlic, hot pepper, soy sauce
etc etc.

I usually do not eat lunch or just have coffee

For dinner, I thaw a portion of stew that I make over the weekend. I cook a big stew in the crock pot on sunday, usually chicken or beef or turkey (My favorite). I reheat the portion on the stove and add in a cup of millet, barley, or wheat berries and cook it until it forms a gruel. I then add a little worcestershire sauce and parmesan cheese and mix it up. It usually has the same consistency as oatmeal.

In the summer it's not as bad when my garden is full of food but in the winter there's less vegetables besides what I froze.

I used to work at a place that did sunday roast but roast potatoes weren't on the menu with anything else so every monday they would get thrown in the soup and blitzed. It may add "another dimension of flavour" but imo it didn't actually make the soup better 9 times out of 10. It's not like roasting peppers or carrots or something where they get sweeter, most of the flavour difference was probably just from the browning on the outside.
