The pasta is just a fun way to express the sauces you make. My advice is that you fine tune the best of the simple dishes. Everyone needs these lovable staples in their lives. I have a sauce dish that is basically oil, tomatoes, and garlic. I never get sick of it because I have to down so well it is always delicious and I always want it.

Also Indian cooking is great for complex dishes done under 30 mins. Once you get the spice measurements down it's just braising, marinating, and stewing. But it still takes a ton of ingredients and you can customize the shit out of them. You can also source really great ingredients if you want to get that extra step in there.
