I don't really care, gas is the most intuitive heat source to cook with.

I can see a flame and know roughly how hot it will get just based on a half second glance at the flame.

When I adjust the temp on my gas stove, I don't even look at the knob, I just look at the flame itself.

This just isn't something I can do with electric or induction.

Is induction a bit more efficient? Sure probably, but I'd rather offset my carbon footprint in other ways than get rid of my gas stove.

I'd stop driving before I stop cooking with gas.
