basically throw the oven on to 190
peel some potatoes
cut the biggers one in half so they are roughly all same size
boil them for as long as you dare before they break apart
preheat baking tray with about 3cm of vegetable oil
when potatoes are done boiling, drain, put back in pot put some flour in the pot and shake them about to rough up the surfaces as much as you can (very important step don't miss out)
bake in the oven, turning once or twice during cooking, make sure to get enough oil on the potatoes throughout cooking
when crispy golden brown, take out of the oven, get some of the oil on them at this stage as well, as you're draining them, so can you sprinkle maldons salt and rosemary over them and they will stick of they are oily

done!
