Why are people bad at cooking and what can we do to change this?

The world's obesity is only getting heavier and the main reason I see is because people stopped cooking at home and rely on restaurants or processed foods.

What's the solution?

The short and easy answer?
Convenience.
It's far too cheap and easy for people to just throw a few shekels at fast food chains or buy precooked frozen food to toss in the nuker. We live in the age where people like my old room mate think Olive Garden is "real food" as he called it and a refreshing break from eating McDonalds & Dominos for lunch and then coming home to microwave some frozen mashed potatoes & a meatloaf.
And I can't blame him for taking the easy path after busting his ass at work from 8AM to 3AM six days a week.

High school doesn't take you into the deep end of anything. The idea is to create a foundation, and removing a huge part of that just because you can't figure out a healthy diet or your taxes is ridiculous. Add those as electives, sure, but don't eliminate stuff that's useful for everyone.

What's even to be bad at? Just throw some ingredients together, don't forget about it and frequently check on it if you don't know exactly how long it takes. I never understand when people tell me they can't cook. I've never followed a recipe in my entire life and I've made tons of different foods. My trick: When I see a serving platter, I take one bite less than I want. Over time, I learned my perfect serving size. Once you know, you stop over serving yourself.
Although at this point, with the obesity epidemic, some people have serious eating disorders and can't take common advice. They need professional intervention because of their habits and brain chemicals being all sorts of messed up.

Issue with Food Tech (assuming you're British) is extreme cost. Not only does the training kitchen need a shit ton of cleaning which must be done to a standard (i.e. you can't trust the kids to do it) it also requires more fussy risk assessment than most DT classes if you expect anything to get eaten.
There's also cost/compliance for students. Anything eaten there must be brought in ingredient form from home by students in shitty backpacks. That means nothing temperature or crush sensitive, so flour or sugar. If students don't bring the ingredients, there's no "do it in your pants" like PE, you just can't teach them.
If you buy in the ingredients and bill the students, parents have meltdowns over it (invariably, regardless of cost) in state schools.

It's amazing how in a time where thousands of recipes are available a mere seconds away, cooking is still seen as a woman's job but something hard to do. But the same could be said for car maintenance, home maintenance, etc. People would much rather spend time doing something else because cooking/baking has such a high barrier to entry, or so it seems to the average person who doesn't cook. Seems like instilling a base foundation is important which is why there is no solution. America's public education is crap in many places and adding different classes isn't going to fix this niche problem (and it is niche). Seriously, most people could live off cheap fast food and the like for the rest of their days and be mostly fine until of course their health deteriorates but then why should I care? Maybe we should just tax fast food places and have tax breaks for those who can provide receipts that they shopped over the year at the local Albertson's.
