pork is safe to eat at lower temps these days. if you cook it to like the old recommendations of 74C/165F, to something closer to 63C/145F, you could even go lower than that safely. if you're used to chewy and dry pork chops, try cooking it a bit lower. it's a much better experience.

Why "these days"? Is it just modern quality control standards & health codes at the piggery or some such?

>> No.17071046

how could you look at a pig and want to eat it
theyre so cute

Not enough fat.
Best pork chops you can have are fatty and you cook em in the oven on a pan
t. farmed pigs for 12 years (grassfed)

>> No.17072945

Unpopular opinion but I genuinely only enjoy any pork product if it's been smoked or slow cooked.
>pork shoulder
Great in slow cooked curries or stews
>ribs
braised and then smoked
>roast
sous vide and then slapped in a 600F oven for 7 minutes with butter rubbed on it, make gravy with the au jus
>chop
smoke that bitch
>bacon
comes pre smoked

that's not how you cook pork
marinate and slow cook on low temp

enjoy your tough piece of undercooked meat

I read in the paper last week about a family in Saint Luis Obispo, California. That whole family died of trichinosis. That's uncooked pork.

>> No.17073455

>>17071030
they stopped feeding pigs the ground up dead bodies of other dead pigs, thus stopping the constant cycle of trichinosis infections. rare pork from mass-farmed pigs has been safe to eat since the 1980s.
