I'm sure most wouldn't consider it fancy but I think Gryère is the best hard cheese and shits all over cheddar.
Other than that I just really like soft washed-rinds, been buying a different one every week for a couple of months. Would really like to get my hands on a wheel of reblochon and make a tartiflette.
