1. Soak the bird in a salt heavy brine seasoned to taste with your spices of choice. Go heavy on the spice. It can be sweet if you want just keep the salt levels high enough.
2. Put the bird in a cast iron skillet if you don't have a good roasting pan.
3. Put an aluminum foil shield over the breasts to keep them from over cooking.
4 Take the breast shield off for the last hour/half hour depending on size and slather the outside of the bird in butter.
5. Enjoy your delicious, flavorful turkey.

Yeah, this is pretty much what I did in yuroland and it turned out great. Being able to compare though, turkey actually does taste better in the US. Not for preparation reasons but the actual bird is superior in taste for whatever reason. As an Aussie that's spent most of his life in the northern hemisphere, it goes both ways.
Even though we all grew up down in Aus seeing Xmas movies and Xmas cartoons with snow and carols and turkey dinners, it's really weird but kind of cool to actually experience it.

I definitely recommend to anyone to try and experience 1 (one) xmas in the opposite season just once.
