Post how your food and family time went.
>agree that I'm only making mashed potatoes and dinner rolls
>mom always makes too much food and buys two 16lb turkeys for the family, which is way too much
>get awoken at 10 am by my mom saying I have to cook the other turkey in my new anova precision oven because there isn't room for both turkeys in the oven
>sous vide the bird to 140°f and it luckily works out
>rolls have trouble proofing due to cold ass kitchen and barely get those done in time
>brothers start fighting in the kitchen about whether or not blacks receive harsher sentences than black people
>lose it and tell them to shut the fuck up
>one brother is so mad at the other that he leaves dinner and doesn't come back
>even one turkey ended up being too much and they all ate the dry ass one my mom cooked to 165+ in the regular oven
>my turkey went completely untouched despite turning out beautiful
>rest of the time my family just ignores everything that happened
>mom doesn't even thank me for making the turkey

I walk in and see a fucking pitbull sitting on the couch and I asked her whose dog it was and she told me it was her and her boyfriends. It's fine, anon. Bacteria starts dying faster than it grows at temps above 130°F. So if you hold it at temp for long enough, the bird will be perfectly fine while allowing you to have juicy meat that is uniform from the inside to the outside. The turkey is still, in fact, pink in color when it was all said and done, but it was still nicely textured and juicy the whole way through. I guess if you enjoy that dry, grainy breast meat taste, you'll like a traditional 165°F turkey instead.

>This is my first year doing the dinner, and I've been having a blast because I didn't go fully traditional, or at least, did a lot of things my family never did all these years. Charcuterie board with brie, a dish of huckleberry compote, salami I've been fermenting myself just for today, plenty of cornichons and walnuts, and crostinis. Brined the bird for two days and quartered it deboned it, rubbed the skin down with a lemon pepper rub, simmered the stock with the bones and giblets since 6am, fucking dried off and cooled off, then breaded and deep fried a lot of the meatier bones like the neck bone and wing tips, that was a hit. Bird's finally in the oven, gonna go with twice baked potatoes and gravy and regular stove top turkey dressing, and of course green bean casserole because you just can't beat the classics. Also been drinking mulled mead all day and watching football with the old man whenever I have a break. Vikings came in clutch.
Now it's late and I'm the only one still up, still drinking, and I'm snacking on cold dressing. Work is going to suck tomorrow but I had a great day.

I don't play around with poultry, I had some bad food poisoning from undercooked turkey before, so I just brine it really well and work hard on the gravy to compensate for the admittedly dry breast meat. I make as strong a stock as I can before I turn it into gravy. Usually reserve enough for turkey soup the next day.

None of my family invited me over to have Thanksgiving with them. I would have told them no, but an invite would have been nice anyway. One sibling is pissed at me because I told her she is full of it for saying she supports BLM and its actions when she lives 30 miles from the nearest black people and BLM looting and riots.
