I cooked some diced up pork chop meat, mixed with some hamburger meat and onions. I overcooked it so it is kinda chewy. Its in the fridge now. It's for the stuffing, stovetop stuffing.
Thinking i will chop up some carrots and celery and onion into little bits and throw it into the water while it comes to a boil, then throw the butter in after boiling and remove from heat. Then toss in the bread stuff and meat and dried cranberries and stir for a few seconds and cover it up. Is that a good way to make stovetop stuffing instead of just the plain stuff from the box.

My grandparents had 8 kids, 2 sets of 4, spaced 15 years apart. Extreme amount of cousins, and Grandma always had a live-in type of handyman or maid who helped her prep, some sad person she brought home from the state of almost homeless she met at the grocery store, then, gave them a roof. These people joined the family and always helped her make her 30 pies, 4-5 mains and put out the cookie jar with old world intricate christmas cookies, like pizelles, biscotti, checkerboard cookies, thumbprints with jam, shortbreads, etc.Different flavors of fudge in tins. Two kinds of fruitcake in tins. She canned all year to put out the chutneys and relishes to go with it all, from watermelon pickles, corn relish, to homemade chili sauce.

My childhood thanksgivings were pretty much all of this minus your deer, but someone might be jerk seasoning some wings or stuffed jalapenos on the grill. The garage door would be kept open and half the neighborhood is dropping in to say hi, while one of my uncles has every instrument necessary for zydeco, blues, 60s and 70s rock, for jam sessions that can be heard for a 1/4 mile radius. There will be 40 cars in the massive driveway, and several coolers with iced beers, sodas, waters, and it will last into the next day throughout the patio, garage, pool deck, everywhere. There could be anything from yoohoo to strawberry soda to beer.

My grandfather, who was an utterly alone and unfortunate orphan by his 12th birthday where he started to support himself on his own, always teared up, and shed a tear in emotional joy when you arrived and greeted him with a kiss on the cheek. He just literally loved holidays. His was a successful life surrounded the family he created on his own. Not only did he support his own family, but sent support to this wife's mother all the rest of her years too. Truly a thankful legacy.

I was only on the hook for a salad and appetizer this year (thanks gramma / potluck culture) so I made a spinach harvest instagram salad with apple, pecan, blue cheese, spinach with a homemade rasp dressing.

I also decided to bring pelmeni with some dill sour cream sauce. It's not very traditional, but honestly turkey sucks and I know a lot of my family agrees so a meat appetizer I thought was a good idea.

I love the holidays. I always put in for telework and spend Thanksgiving to New Year eating holiday food, enjoying my forested home, and playing Stardew Valley. Also watching Christmas movies like A War in the Pocket.

I'm thankful for having friends who can depend on me (and on whom I can also depend).
Done so far:
Broke down a 19lb-er to use the back and wingtips in stock-making and freeze the thighs and drums for future eatings.
Made the stock which got then made into gravy.
Made purple cauliflower stamppot.
Made cranberry rhubarb sauce.
Made stuffing-stuffed cabbage.
Seasoned the breast with rosemary, sage, black pepper, dried lemon and dried onion and shoved it in the oven.
About to stuff some winter carrots with rice, mushrooms, pine nuts and dried, unsweetened sour cherries which will go into the oven with duckfat and dill once the turkey comes out. Would've used turkey fat from the stock but I used it all up making the gravy and stuffing.
About to braise some baby corn in compound butter flavoured with parsley and dried onion.
About to make blue foam jell-o.

My turkey had practically no thighs this year. The drumsticks weighed more than they did. That's weird. Anyone else had a similarly oddly-shaped bird?

I just don't like when it's made into a dessert. Pumpkin pie. Zucchini bread (it's a fucking cake and you know it). Butternut squash muffins. That sorta thing. Hate'em. I like squashes when prepared in non-sweet ways.
Like... if I couldn't get the baby corn this year, I was gonna cook a spaghetti squash or acorn squash instead. The spaghetti squash would have been with chilli, garlic, parsley and olive oil. If I got acorn squash instead, I would have wedged it, dusted it in corn-starch and deep-fried it though I don't know right now how I'd've seasoned it.

Depends on how you plan to combine the two. I know chestnut pies exist in various forms, some made with whole chestnuts akin to a pecan pie and same made from chestnut flour and therefore more similar to a semolina pudding in texture. There are likely others, too. If I were to make a cherry chestnut pie, I'd make the first type of chestnut pie I mentioned, the one that's like a pecan pie, and just toss some cherries in there. Forgot to take a picture of the turkey but did do my plate.

The gravy is like 50 percent butter, because I made. 3/4lb roasted garlic and herb butter to rub under and on the turkey skin. Shit was nice as always.

Yeah that sucks. When cooking under pressure it's easy to get nervous about serving undercooked poultry. A good meat thermometer and knowing where to stick it takes out a lot of the guesswork. I can post my turkey method if you're interested.

my smoker is electric so I can set the temp and then a timer + having a probe in it, if i hadn't fallen asleep and left it to my mom I am sure I wouldn't have over done it, it was about 11.4 pounds and took about 3 hours at 275, also I spatchcocked it which should've cut down on cook time.

in this smoker I've done ham, bacon, cheese, turkey breast, salmon and mustard seed, there is a drip tray in the bottom of the smoker but also an oval tray that can be more easily taken out, you are supposed to put water in it to help prevent drying out the meat or what have you, so the drippings mix with the water instead of burning and the water in the pan will evaporate so it shouldn't water down the dripping, but with gravy you are probably gonna add a bit more extra liquid anyway.
