Morrocan is my favorite African cuisine. It's got a lot of mediterranean and middle eastern influence while still having alot of really sick culinary techniques, traditions, and ingredients that are inherently morrocan. Slept on cuisine, I find alot of inspiration from it when I'm cooking.

Absolutely. Like another anon said, North African cuisine is fantastic. Also personally into Ghanian food. Most doesn’t look appealing, but I don’t care that much on that front because it’s fantastic. And fufu-esque things are great, if a little hard to get used to. I've only been to East Africa but I had some interesting dishes there:

1. Ethiopian food has already been mentioned. One thing I particularly liked is the beyaynatu, which is a mixture of about 4 vegetarian curries and 3 cooked vegetable dishes, all served on the flat pancake they call an injera. They seem to take Christianity really seriously there, so about 1/3 of the year is strictly vegetarian days for them
2. In fact Ethiopians seem incapable of eating any dish without the sour pancake. Even when they eat spaghetti in tomato sauce, it has to be served on the sour pancake which they use to scoop up pieces of spaghetti.
3. Kenyan biryani. Shares a name with the Indian dish but is actually quite different. Basically pilau rice served with a rich, spiced tomato sauce with some variant of fish/chicken/meat. In my opinion it's even better than Indian biryani
4. Chapati with beans, again the chapatis are quite different from the Indian ones. Not sure why this tasted so good but it did
5. "Beef stew with all foods", weird name but that's what they called it in Uganda. Basically beef stew served with a variety of side dishes (cornmeal porridge, boiled bananas, sweet potatoes, tapioca) all on one plate.

Of course, most of the time they didn't eat this. Their staple dishes were some variation on beef stew/beans with rice/corn porridge and boiled green leaves, which made up about 90% of their meals.

Most of sub saharan Africa is extremely poor. In those regions, the food is mostly starches with affordable sauces, such as cornstarch pudding (has many names, such as posho), and bean sauce, or peanut sauce. It's not like in the west where every dish can have tons of meat, and we think nothing of it. They can't afford it. They are literally just trying to get by. So Ugandan food is mostly quite bland, but I enjoy it. My wife is Ugandan. Food on Zanzibar, on the other hand, had tons of breadth and was rich in taste. Obviously because they have more international impulses both in history and today, and a ton of spices and tradition of using them. South Africa has a rich barbeque culture, brought in with the whites. And some of the best fishing and hunting you can find. All manner of animals to cook...They mostly don't though. You have to go to some specialty store to find those meats, but as a tourist, you should.

Help me out here. I live in harlem, which if you're not familiar, is basically synonymous with "black people area". There are a lot of african immigrants here too. Black americans "think" you dress that way because you do, at least from our perspective (speaking as american not black, which I'm not, but I completely understand where they might get that impression).

There are other tells (like how they walk or even how they hold themselves standing still), but the clothes really stand out. I'm honestly perplexed by what you think the stereotype should be. Do you want us to imagine people in africa as dressing like extras from The Jetsons? Mad Men? Apocalypse Now? Barry Lyndon? Mallrats?

Great foods arise from great cultures. Great cultures only arise once basic problems like agriculture and not starving are mostly solved. Only then can a society prosper and put real effort into non-survival activities like developing delicious recipes. Simply put, the people are so goddamn primitive, bushmeat and bugs are the rule, fruit and nuts if you can find it. The region is East Africa. The 'corn fufu' is called Ugali. God-tier food by any metric. It's actually maize flour that is, for lack of a better description, baked in boiling water. Think cooking porridge, but is meant to come out with the firmness of malleable, plasticine sponge cake. It has a very delicate flavour that goes well with collard greens, spinach, avocado and any meat. Fufu has the consistency of mashed potatoes, so it's quite different from ugali.
Like this >>17006924 anon mentioned, Kenyan chapati is quite different from Indian chapati. I have been to both India and Kenya and I can confirm this. Kenyan chapati is cooked with generous amounts of oil, whereas Indian chapati is very economical when it comes to oil.
Biryani is also quite popular here. We grow great rice (Pishori-Basmati) so we have a lot to work with.
Nyama Choma is another delicacy. It's basically 'roast meat', without all the gay Southern 'BBQ' ingenuity. Roast meat + salt. Nothing more, nothing less. S-tier.
Pilau. Rice cooked in various herbs (garlic, ginger, masala, sometimes cinnamon and cloves). It's a Coastal dish. Very very good.
Lots of greens and cereal.
Pork isn't as popular here. I personally don't think it's anything special.
We eat a lot of fish. Especially Tilapia and omena (Lake Victoria sardines).
Chicken is a delicacy here, but beef is most widespread.
We traditionally don't use many spices here, especially the further from the Coast you are. Kenyan food just has a natural flavour. Almost everything is 'organic', so we eat plants and animals in their truest form. I can't say the same about India, though. The eggs tasted like water, the chicken didn't smell like anything, the tomatoes tasted like diluted lemons, etc. Now I get why people there are obsessed with spices.
Kenyan people nowadays are opening up to experimenting with spices so I think we will see a change in Kenyan cuisine in years to come.
