Mainer here. Lobster is amazing, but crab is even better. I dated a Thai girl who’s mom was an incredible cook, and she would make this hot sauce that was great on anything, but especially tasty on shellfish. I think it was just lime, cilantro, chilis, soy sauce, green onion, garlic and vinegar. Absolute game Changer.

Let me modify my statement. On the coast we didn't usually eat the first class lobster because we got paid so well for it, even in the 50s and 60s. Lobsters with only one claw for example would go for half price, and could be eaten instead of sold. In Norway we had a very well developed supply chain for exporting the lobster. I don't know so well about coastal Sweden, but maybe you weren't able to get it to a market that was willing to pay for it.

In Norway we had lobster parks. This on in pic is preserved until today, it had space for 24.000 lobster awaiting export.

Lobster being a delicacy goes back to Roman times, or earlier. "Lobster was cheap prison food until the 50s" is a gigantic cope for people who can't afford it or can't appreciate it. It seems to be true for America, but then again, what do and did they know about cuisine?

many classic finnish dishes take their roots from a poor time when people simply couldn't afford losing a part of the nutrients in the food to the oven. thus everything had to be made into a soup or a stew. from this old generational trauma comes the macaroni casserole, the recipe itself isn't too bad. you fry up some ground meat and mix it with macaroni (you could even eat it as is) and then mix it with some egg-milk mixture and stew it in the oven. the modern recipes have you spice the meat but all of the taste gets absorbed by the egg-milk mixture. the traditional finnish macaroni casserole is one of those dishes that is only palatable when you slather it with ketchup and that shit simply ain't ideal for me.

i had thought about just replacing the egg-milk mixture with cheese sauce because there is no idea sticking with that nasty poverty food anymore. i think the recipe could otherwise even remain the same but with cheddar sauce. but i have a hunch that i would absolutely love lobster (at least when it isn't in its' recognizable form). i should some day make an atraditional lobster-macaroni casserole and base it off this particular recipe.
