The heat is obviously enjoyable but the peppers themselves have flavors. Scotch bonnets are particularly delicious but they're a bit hot for me. If it were possible to get the flavor from those with only like half the heat, I'd buy them by the truckload.

For me, there is some fun in the extreme heat and spiciness but I don't like it as an everyday thing.
My ideal heat level is lower down in the mild level where your mouth is warmed up but it's really easy to ignore any burning sensation.
While heat can be inherently enjoyable (since eating is more than just flavor alone) peppers and other spicy spicies add unique flavor.

Why did people start to eat hot peppers? I think it is because most relatively isolated communities back in the day mainly ate boring repetitive subsistence level shit. In the right climate they grow really well too. It is also a 'taste' which stores/preserves/travels really well, you can dry it out and make a brick of peppers for trade/storage. I think when you were relatively so isolated it was easier to develop these small localised identities, almost tribal, but like ... the people from over that side of the hill mainly eat spicy food that is their thing and it marks them and forms a big part of their identity and our local lore. But yeah if it was rice and beans for dinner every day for 50+ years I'd sure as shit want some hot sauce.

Why do we continue to eat hot peppers? They have interested and varied flavours alongside the heat. Hot spicy is another component to balance in a dish that benefits from being hot or brings interest to an unconventional dish or combination like chilli ice cream or something. It exists, why not take advantage of it?

If you eat a lot of spicy food you come to look forward to it. You get used to it, your tolerance builds. Nobody is going to recommend you start off chewing a carolina reaper or chugging a bottle of capsaicin extract any more than you start learning about something like say alcohol by chugging a whole bottle of everclear, but even extremely hot sauces have a place, maybe a dot on the side of the plate, you eat it slowly microscopic piece by piece testing your limits, clearing your sinuses, getting an endorphin rush etc.

I have to cook for a baby as well now so the genuinely spicy dishes I crave are off the table. I have doubled down on the hot sauce because it is boring as shit to have to eat baby friendly tomato pasta for the 50th wednesday in a row.
