This is how I make eggnog:
>1 raw egg
>2 shots of bourbon
>1 shot of simple syrup
>shake over ice
>strain into a big glass
>top with about 200ml of milk
>grate a bit of nutmeg over it

It's pretty delicious.

It is a big thing in Europe and the commonwealth nations. I actually was working in a store here in Arizona when the FDA finally legalized it here in the US. Basically it's a process that makes it shelf-stable for even longer. It's used a lot for flavored milks since the process is sort of similar to caramelization anyway.
Also, I bet most egg-nog is done in one batch and needs to last for the entire season so having the longer shelf life helps a lot.

Store bought eggnog is shit. If you've never had homemade aged eggnog then you've never had it. Follow the traditions of your ancestors and do it properly. This is my own recipe adapted from Alton Brown, Serious Eats, and a cocktails youtube channel. It's fucking delicious, seriously. Aged eggnog doesn't have that weird metallic that fresh eggs or store eggnog has.


Aged Eggnog

12 eggs
1 1/2 cups sugar
pinch of salt
1 1/2 cups of bourbon (Buffalo Trace)
1/2 cup of cognac (Hennessy)
1/3 cup of dark rum (Kraken)
1/4 ts fresh nutmeg

1 cup heavy cream
3 cups whole milk
fresh nutmeg

Add 12 egg yolks into a 2 cup measuring bowl. Add whites until 1 2/3 cups of egg is reached. (Reserve remaining whites for another use.) Pour eggs into mixer and beat on medium speed until pale. Slowly sprinkle in 1 1/2 cups of sugar. Add a pinch of salt.

Combine 1 1/2 cups of bourbon, 1/2 cup of cognac, and 1/3 cup of dark rum. Slowly drizzle alcohol into mixer on low speed.

Strain into glass container (1.75mL bottle will be more than enough) and add 1/4 ts of fresh nutmeg. Screw on cap and invert bottle to distribute the nutmeg. Cover bottle with foil to block light. Store for a minimum of 3 weeks in the refrigerator, ideally 3 months or more.

When it’s time to serve, whisk 1 cup of heavy cream to soft peaks in serving bowl. Whisk in 3 cups of whole milk and then the aged egg solution. Ladle into cups and garnish with freshly grated nutmeg.

Yield: 70oz at 11.65% ABV
