I don't see how it could be bad. It's just noodles, chili type sauce, and cheese. How it is considered a true regional dish is the part that baffles me. But, I know a lot of people from Ohio. They're the strangest of the Midwest bunch by far.

It's actually pretty good. I'm from the East coast but went to college in Cincinnati and quickly was exposed to Cinci chili. While I'm not the biggest fan on the excessive cheese, the chili tastes quite nice. I prefer it on a coney rather than spaghetti and at local diners rather than from Skyline or Gold Star (although the later is better in my opinion). It looks and sounds gross, but it's not. You can biy Skyline and Goldstar chili's in a can if you want to try it.

Man you can do it up yourself in your own kitchen at home no problem, just get you a can of Skyline chili, do up some noodles, and cheese dat bitch.
It's dense as fuck, it's easy to make, and it's tasty.
That's a quintessential diner chow.
Anything a diner can do up for you, you can do up at home just as easy. That's what diner food is all about.
(any other chili will do as well, but if you want the authentic thing I think it's supposed to be that Skyline stuff)

Coastie here. I've tried a lot of regional specialties all over the US and Canada. Yea, if you're expecting a transcendent dining experience, you'll be disappointed. If you want all sorts of variations on yummy comfort food, you'll enjoy. Scrapple, Chicago italian 2 way, smashburger, poutine, and yes Cincinnati spaghetti are cash.
It's okay to like all sorts of international cuisine, but not all sorts of N. American regional cuisine? The two-faced snobbery is just a way to feel good by badmouthing others.

I can find these in grocery stores in Michigan. They are expensive though. $5-6 a can. I don't know if they are any cheaper in ohio. I usually just make my own at home. Its a pretty easy chilli to make, but the key is to get a really fine grind on the beef. You want the meat evenly distrubted through the sauce not watery. I still have yet to replicate the cheese though. I don't have a fine enough grater.

The easiest way to get a fine grind on the beef is to make it like real chili parlors do: don't brown it off. Put it raw into the pan with your other ingredients and add the liquid. Use a potato masher to mulch the ground meat as the water heats. As the meat caramelizes it kind of clumps together, you get a much finer/smoother consistency if you don't brown it.

If you want to make it cien por ciento autentico to how Skyline does it, you just dump everything into the pot all at once, cover, turn on the heat, and mash. The idea is that the real star of the show is the spice powder -- Cincinnati chili is basically just American curry -- with the beef, onions, garlic, etc playing supporting roles. The texture and spice blend are king, everything else kneels.

There is nothing quite like it. Don’t let OP fool you. Cincinnati native here.

For starters, there is no detectable chocolate taste, fuck sake. The taste of the chili is an upgrade from traditional chili. Imagine chili that doesn’t have that tomatoey taste, and is just very savory and a bit on the salty side.

There’s nothing quite like the scalding hot noodles and scalding hot chili together, topped with the sharp flavors of cheddar and the crunch of saltine-esque oyster crackers.

Then, with some decent black pepper and Tabasco, or the official Skyline hot sauce, which is quite similar, to add some zing and bam

This is truly my favorite food in so many respects. My only issue with it is that it seems a lot of chili liquid somehow gets wasted at the bottom of the dish because the spaghetti doesn’t quite absorb it all.

You’ll run into problems if you don’t know how to eat around the cheese at the beginning or if you’re too much of a moron to know how to twirl your spaghetti

I one time bought a couple cans of Skyline and some 312 goose island and poured it in a pot. Cooked off the grease and was left with diarrhea . Point is, Skyline is garbage but I still eat it (not out of the can). Cincinnati person here.

I love the midwest. I dated a girl from wisconsin long distance and flew out to be with her for a few weeks. She took all over milwaukee and madison, took me to all these bars. The bar culture is amazing. All of them have somethign special about them. The one i remember the best is a bar where as you walked in you had to spin a wheel and whatever the wheel landed on is what you got, whether that be a free drink, a free hotdog, or you had to buy the bar a round. Wonderful drinking culture. Wonderful food too.

However. Their idea of chile is an abomination and anyone who eats chile sphagetti with cinamon and cheese needs to be beaten like a dog and burned at the stake. I hate you and i want to kill you.
