If you're just tired and lazy make roasted chicken, or pork chops, steak, etc. and roasted vegetables, add a nice spice rub. Cooking from whole foods is generally healthy and easy and if you get the technique right, reasonably tasty as well. Oven takes time but not really effort. Save convoluted recipes for weekends if you feel like it.

yup do the whole yard, can improve on the sauce making process though, but still tastes much better than you get in a grocery store.

desu meat always comes out very plain tasting to me if I don't have sauce/fried stuff on it. want to be on the healtheir side tho.

Tomorrow I'm gonna throw some chickpeas, raisins, salt, water, and a can of tomatoes in my pressure cooker, while those are cooking I'll char chicken titties, roast sweet potatoes, onions, and squash. Combine shit when my chickpeas are cooked, add cinnamon, clove, cumin, paprika, garlic, and cayenne, let that simmer for about a half hour so everything can get acquainted, then serve that with greek yogurt.
If you're too poorfag for a pressure cooker used canned and rinsed chickpeas or soak overnight then boil- make sure canned tomatoes cook for at least half an hour whenever using them so they don't taste like awful metallic piss.
It'll be sloppa but I'm confident that it will also taste good.

Plain tasting meat tho? Steak’s easy - Salt em 45 mins before cooking, just let it sit on the counter for that time so they come up from fridge temp and your cast iron’s slowly coming up to temperature. Butter baste with lightly crushed garlic and a couple sprigs of thyme, freshly ground black pepper right before you serve. Perfection. See YouTube for details. Rare to medium rare is the only way.

Sour cream. And I did add Dijon Mustard as well. I cook my chicken on medium, for 5 minutes each side, I do not move them at all before needing to be flipped or taken out. Rest for 5 minutes, slice on the recessed cutting board to save the juices.

take out and plate

Are you overcooking them? You want to target 160, then let it rest. I still find boneless skinless breast hard to cook desu, the bone-in variety is MUCH juicier and more pleasant, even if you overcook it. But because of the better heat retention of the bone-in cut, you can cook to 150-155 safely as well. Or just use thighs and deliberately overcook them, they're better that way.

This is mostly technique. If baking give it a nice spice rub and dab off liquid/coat with oil. If pan frying make sure you get a good sear and use enough salt, dry brine if you can. In both cases don't overcook. If you always NEED sauce or breading to rescue your meat, it's a sign your cooking is a bit fucked. Not that either of those things are bad

I want to avoid eating anything too salty/greasy/unhealthy in general. I've seen way too many people develop problems just eating like that in the long run.

Salting your steak isn't gonna do anything bad to you anon. The sodium overload people get is from things like ramen or other processed foods that contain a fuckton of sodium as a preservative. Adding salt to fresh food is safe, don't make boomer-tier misery slop. Now that I think about it, this is probably where your plain-tasting meat issue is coming from.

If you like indian food make chicken curry? Honestly chicken and rice is the best way to keep yourself fed.
So for chicken curry you'll need a jar of Tikka masala sauce, red bell peppers, onion, garlic, and ginger.
Just throw your chicken in the skillet until it starts turning brown, then add vegetables and let them cook, then dump the sauce on it. Serve it over rice.

You can't go wrong with a nice stew.
It can be varied endlessly around your preferences or around what happens to be on sale or in season.
Brown some meat and onions in a pot, add in whatever vegetables you want, add some liquid (depending on budget you can use water, beer, wine, broth, or stock), spices and herbs obviously, simmer for a couple hours.
Eat as-is or with rice or some nice bread. You can very easily and cheaply bake the bread yourself as well.

For learning and improving in the kitchen I usually suggest the humble French onion soup. It's cheap and delicious and it's a great opportunity for you to learn some knife skills.
Look up how to french slice an onion on Youtube. In fact, look up a lot of really basic shit on Youtube. People tend to assume they know how to chop an onion or peel a potato or whatever and then they do it the wrong way their whole life because they never bothered to check.

Something like pic related is very easy to make as well. Just root veggies and a chicken, or parts of a chicken, in the oven.

Indian food and mexican food are great ways to change it up, and they share a lot of the same spices and ingredients.

Both cuisines can be as simple or as complicated as you want, have big flavors, and are great for leftovers. Let me know if you want any specific recipes or dishes, but between those two you should be able to come up with a lot of interesting dinner options off the norm.
