Lettuce has no place on a burger. Tomato, only if super thin. Most places just throw on a huge piece so I usually don’t get it unless I know the establishment has razor thin slices.

Ideally, two patties thin and smash style, two slices of American cheese, sliced onion, raw or sautéed. A little Russian dressing, animal style sauce, thousand island etc. and we’re good to go. A pickle or two but not enough to cover the burger

For me, the McChicken might not stand out as the flashiest sandwich or anything but it does stand the test of time. Also, for restaurants it's a MASSIVE fucking time saver. Your protein drawer could literally just be a deep 1/2 pan or full size hotel pan full of ground beef and a #8 scoop and your griddle cook can turn out burgers to order. Since I have it on a burger I prefer it to be relatively thick so I make a roux sauce.

tbsp - butter
tbsp - plain flour
Milk
Stilton

1 - Melt butter in med heat pan and add flour cook until smell has raw flour smell has gone, stir occasionally
2 - slowly pour milk in until desired consistency (remember it's going on a burger and you don't want anything particularly messy)
3 - Crumple in the blue cheese (I use st agur since that's what me and my dad enjoy so we normally have it stocked) do this until desired cheesiness.

Since I more often than not have caramalised onions (either freshly made or pre-made and frozen) they go together amazingly, you could always experiment with the sauce by separating the batches and adding different things (pepper, chives etc).

so hungry right now, I need that burger. Can you briefly describe the cooking method? Guessing very high heat/very short cooking time for patties that thin, then add cheese in the last 30 seconds or so of cooking, let rest covered for a minute, then add toppings.
